Cannabis Infused Berry Vinaigrette

The berry cannabis-infused vinaigrette is a vibrant, tangy dressing with a rich, fruity aroma from berries, complemented by the deep, sweet acidity of balsamic vinegar. The honey brings a subtle sweetness that balances the tartness, while the cannabis infused olive oil adds a gentle earthy undertone and provides a smooth, velvety texture and richness. This vinaigrette with its harmonious blend of sweet, tart, and herbal notes is perfect for elevating salads or drizzling over fresh greens.
Ingredients:
1/4 cup infused olive oil (see Making Herbal Infusions)
1/4 cup berries of your choice (raspberries, strawberries, blueberries, or blackberries)Â
2 tablespoons balsamic vinegar
1 tablespoon of honey
1/2 small shallot, diced
Salt and pepper to taste
1. Add all ingredients except for salt and pepper to a food processor and blend for approximately 30 seconds or just until well combined.
2. Add salt and pepper to taste and mix well. If the mixture is too acidic for you, feel free to add a bit more oil and honey. If it needs more acidity, add more vinegar by a teaspoon. Mix well.
3. Store the vinaigrette in the refrigerator for up to a week and shake well before using to dress salads. If it solidifies, simply let it sit at room temperature for a few minutes until it liquefies.
